Roasted Chickpea and Lemon Curry Salad

Roasted Chickpea and Lemon Curry Salad
serves one

Roasted Chickpeas

1 can chickpeas
2 tbsp lemon juice
1 tsp lemon rind (optional)
2 tsp olive oil
1 tsp (or more) curry powder

mix all ingredients and spread over a baking sheet
preheat oven to 450*C and bake for 10 min. flip and bake for another 10 min.


1 cup (more or less) spinach cut in half
1/4 - 1/2 avocado (your choice)
1/2 cup pea shoots
alfalfa sprouts ( i didn't have any but they would work really well)


1 tbsp lemon juice
freshly ground pepper to taste
1 tsp honey
1 tbsp balsamic vinegar
1 tsp curry powder
