Peanut Butter Chocolate Chip Cookie Dough Bites
No Flour, No Oil, No White Sugar
Ingredients
1 1/4 cup canned chickpeas, well-rinsed and patted dry with a paper towel
2 tsp vanilla extract
1/2 cup + 2 tbsp natural peanut butter or PB2
1/4 cup honey (or agave)
1 tsp baking powder
pinch of salt if peanut butter doesn't have salt in it
1/2 cup chocolate chips
Directions:
Preheat oven to 350 degrees
Combine all ingredients, except for the chocolate chips in a food processor and blend until smooth.
Ad chocolate chips to the mixture and stir
Form 1 1/2" balls. Place onto a piece of parchment paper.
Press them down slightly to flatten (They don't rise very much so keep pretty round)
Bake for 10 minutes.
