CORNMEAL MUFFINS
Makes 1 loaf bread or 1 dozen muffins
You can make your cornbread without
sugar if you prefer. Cajuns like it sweet.
DOUBLE THE RECIPE IF YOU DON'T WANT THEM TO BE FLAT
1 1/3 cups all purpose flour
2/3 cup cornmeal
2/3 cup sugar (optional)
½ cup corn flour (you can use cornmeal if you don't have corn flour)
5 tablespoons baking powder
½ teaspoon salt
1 1/3 cups milk
5 tablespoons unsalted
butter, melted
1 small egg, beaten
In large bowl combine the
flour, cornmeal, sugar, corn flour; baking powder, and salt; mix well, breaking
up any lumps. In a separate bowl combine the milk, butter and egg and add to
the dry ingredients; blend just until mixed and large lumps are dissolved. Do
not overbeat.
FOR BREAD
pour mixture into
greased 8x8-inch baking pan and bake at 350*F until golden brown, about 55
minutes. Remove from pan and serve immediately.
FOR MUFFINS
Spoon mixture
into 12 greased muffin cups. Bake at 350*F until golden brown, about 45
minutes. Remove from pan immediately and serve while hot.

Peanut butter Chocolate Cookie Dough Bites
Peanut Butter Chocolate Chip Cookie Dough Bites
No Flour, No Oil, No White Sugar
Ingredients
1 1/4 cup canned chickpeas, well-rinsed and patted dry with a paper towel
2 tsp vanilla extract
1/2 cup + 2 tbsp natural peanut butter or PB2
1/4 cup honey (or agave)
1 tsp baking powder
pinch of salt if peanut butter doesn't have salt in it
1/2 cup chocolate chips
Directions:
Preheat oven to 350 degrees
Combine all ingredients, except for the chocolate chips in a food processor and blend until smooth.
Ad chocolate chips to the mixture and stir
Form 1 1/2" balls. Place onto a piece of parchment paper.
Press them down slightly to flatten (They don't rise very much so keep pretty round)
Bake for 10 minutes.
Baked Quinoa Patties
Baked Quinoa Patties
This past Saturday evening we made these incredible Baked Quinoa Patties from the blog Whisks and Whimsy at a family BBQ. In all honesty, the recipe is absolutely fantastic! Not only are they pretty simple to make, they are absolutely delicious. The recipe makes quite a few patties as well so if you have extras you can always save them for another day when you don' t have time to cook.
Tips:
make sure you use a baking sheet instead of a glass pan to ensure that the outside gets nice and brown and crisp.
make sure to grease the pan to help brown the patties and allow them to slide off easily
Ingredients
Olive oil
1 yellow onion, finely chopped
1 tsp cumin
Coarse Salt
3 cloves garlic, minced
2 1/2 cups cooked quinoa, room temp
5 large eggs, lightly beaten
1/2 tsp fine grain sea salt
1 cup finely chopped kale
1/3 cup finely chopped chives
1/3 cup finely chopped flat leaf parsley
1/3 cup freshly grated parmesan
1 cup whole grain bread crumbs
1 tsp baking powder
preheat oven to 400 degrees.
Heat 1 tbsp olive oil in a skillet over medium heat. Add onion, cumin and salt. Cook until the onions have softened and turn translucent and stir in the garlic. Cook for 30 seconds more, until the garlic is fragrant. Turn off the head and set the onions aside to cool.
In a large bowl, combine quinoa, eggs and salt. Add kale, chives, parsley, parmesan and cooled onion mixture, mix well. Stir in the bread crumbs (grind in a food processor) and baking powder. Let stand for a few minutes so the bread crumbs can absorb moisture. If needed add more breadcrumbs or water to adjust the consistency of the mixture— it should hold together, but leave it on the wet side if you can so that is stays moist throughout when cooked.
Oil a baking sheet with 1 tbsp of olive oil. From the quinoa mixture into 12 patties and arrange them on the oiled baking sheet.
Bake for 20 minutes, until bottoms are brown and crusty. Flip the patties over and bake for another 5 minutes.
Makes 12 patties
You can serve as a burger in a bun or eat it on it's own. It will be delicious either way.
